Whole moong dal/curry

Whole moong dal is a healthy gujarati dish as moong is rich of protein.



Ingredients:
  • 1/2 cup whole moong
  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • Pinch of asafoetida
  • 4-5 curry leaves
  • 1 tbsp chopped garlic
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 2 tsp coriander - cumin powder 
  • 1/2 tsp mango powder (amchur powder)
  • 1 tsp garam powder
  • salt to taste
  • 2 tbsp jaggery
  • 2 tsp lemon juice
  • coriander leaves to garnish

Steps :
  1. Rinse the moong dal, drain it then add 3 cup of water, 1 tsp salt and boil it in pressure cooker till 5-6 whistles on medium heat. 
     
  2. When the pressure cooker air is released, open the lid. Moong would be cooked and mushy. 
  3. Take oil in big pan on medium heat then add mustard seeds and let it crackle. Then add cumin seeds, asafoetida and curry leaves. Now add garlic and cook it for few seconds on low heat.
  4. Add moong dal and stir well. 
  5. Add red chili powder, turmeric powder, coriander - cumin powder, mango powder and garam masala, mix well with dal. You can add more red chili powder is you want more spicy.
  6. Add 1 cup of water, mix well, add salt as per your taste. You can also add more water for required consistency.
  7. Cover it with lid and let it cook for 8-10 minutes on low-medium heat. stir occasionally
  8. Add jaggery, lemon juice and cook it for few minutes. Mix well and turn off the heat.
  9. Garnish it with coriander leaves and serve hot with rice, jeera rice or chapati.
