Roti / Rotli / Phulka / Chapati / Indian flat bread

Roti is a thin and soft Indian flat bread also popular as Rotli/ Phulka or Chapati. It is made of whole wheat flour also known as atta. You can find whole wheat flour in any indian store. Roti is served with any subji, curry or dal. So here is the step by step recipe of Roti. Make it and enjoy eating.

Ingredients :

  • 2 cup whole wheat flour
  • 1 cup water
  • salt to taste
  • 1 tsp oil or ghee for coating
  • more ghee to apply on top (optional)
  • Extra flour for dusting and rolling

Steps:

  1. Mix whole wheat flour and salt in bowl.
  2. Add little water in it and start kneading. 
  3. Continue knead the dough and add little water at a time.
  4. When all flour become together, knead the dough for 4-5 minutes. you can add more water if needed. It took me 1 cup of water to make a dough. Dough should be soft.
     

  5. Apply some oil or ghee on it and make a nice coating. Now cover the dough and keep it aside for 30 minutes. Before started making roti, knead it for once. Dough would be smooth and elastic.
  6. Take small ball of dough and roll it and press it in your palm to make it smooth  and flatten. 
  7. Dust the ball dough in whole wheat flour and start rolling using your rolling pin. you can dust the dough when it started sticking to rolling pin, dust in flour as many time as needed and continue rolling until you get thin round roti.

  8. Meanwhile turn on the heat on medium - high heat and put the tava or griddle on it. When it become hot, put roti on it.
  9. There would be small bubble on it in few seconds, flip it on other side.
     
  10. when it is cooked on other side, cook the roti directly on high heat or on flame. If you have electric stove, you can use roti grill to cook the roti.
  11. Now flip and cook roti on both side and it will start puffing up. Do not cook for longer time or roti will be hard.
  12. Put the roti in roti basket and apply ghee on it.
  13. Serve hot with dal, subji, any curry or eat as it is.

Notes :

  • Dough should not be so hard or soft. It should be soft enough to make easy rolling.
  • It dough will be hard then roti will become hard. For soft roti, dough should be nice kneaded and soft.
  • If Ghee applied on top of roti will keep roti soft for longer period of time and add good taste as well.
  • You can also keep rotis in food server insulated casserole to keep it warm for long time and wrap it with cloth or paper napkin.
