Aloo Paratha (Stuffed Potato Paratha)

Aloo paratha is whole wheat Indian flat bread stuffed with potatoes and spices mixture. It is very popular north Indian dish. My kids love it with boondi raita.

Ingredients:


For dough:

  • 2 cup whole wheat flour
  • 1 cup water or as needed
  • salt to taste (1 tsp salt)
  • 1 tsp oil
  • More oil/butter/ghee for cooking

For stuffing:

  • 4-5 big potatoes
  • salt to taste
  • 1/2 tsp sugar
  • 2 tsp sesame seeds
  • 2 tsp fennel seeds
  • 2 tsp green chili chopped or as you needed
  • 2 tbsp coriander leaves finely chopped
  • 2 tsp lemon

Prepare Dough:

  1. In a big bowl, combine whole wheat flour, salt and add water as needed and prepare a soft and smooth dough. Knead it for 5-6 minutes and cover the dough with littel oil and keep it aside for 30 minutes. Knead it for 1 minute before using as you make dough for roti. You can refer my Roti Recipe for more details. Our dough is ready to make paratha. 

Prepare Stuffing:

  1. Take 4-5 big potatoes, wash it, cut it from middle if its very big and boil it in pressure cooker for 5 whistles or until they are soft. 
     
  2. Peel the potatoes and Mash them with hand potato masher. 
  3. Add salt,sugar, sesame seeds, fennel seeds, green chili, coriander leaves (Cilantro) and lemon. 
     
  4. Mix it very well and make small size ball and keep it aside. 
  5. Now take lemon size dough ball. Dust a litter flour and roll out in small circle like roti. 
  6. Put potato stuffing in center and fold dough from middle and seal all edges very well. Remove the extra dough with sharp edge bowl or with knife. Press it down gently to make it flatten. With this method, there will be no extra dough in paratha. It will be even with good taste of stuffing and dough in each and every single bite. 
     
     
  7. Now dust a little flour and roll out the flatten dough with stuffing like 1/4 inch thick paratha. Gently roll the paratha or stuffing will come out.
     
  8. Meanwhile heat the tawa on medium heat, when it gets hot, put paratha on it. 
  9. When there is small bubble on it, flip the paratha. Apply oil on it and flip it on other side and also spread little oil in it. 
     
  10. cook the paratha on both side until it is golden brown spot on it. 
  11. Now its ready to enjoy. Spread some butter or ghee on it if you want. 
  12. Serve hot with curd, raita or pickle.
