Dark Chocolate Cake - Eggless

Cake would come out moist and chocolaty with this easy recipe. This dark eggless chocolate cake would be great for any occasion or would be nice to create an occasion. If you are chocolate lover, you will not leave a chance to try it out! Special Thanks to Ashuni for sharing this recipe.

Ingredients:

For cake base :

  • 1 cup wheat flour/ all purpose flour/ maida
  • 3/4 cup sugar
  • 3 tbsp dark cocoa powder
  • 1/2 tsp baking powder
  • pinch of salt
  • 1 cup cold water
  • 1/4 cup oil
  • 1 tbsp lime juice/vinegar
  • 1/2 tsp vanilla extract (optional)

 For cocoa frosting (Chocolate Ganache):

  • 2 tbsp unsalted butter 
  • 4 tbsp granulated sugar
  • 4 tbsp cocoa powder
  • 3 tbsp milk

Steps:

  1. Sift wheat flour, sugar, cocoa powder, baking powder and salt in a big mixing bowl. Mix it well and keep everything ready to make a quick mixture.

  2. Preheat oven to 390 degree Fahrenheit. 
  3. Grease the 6 by 8 inch rectangle baking pan or 8 inch circular baking pan with oil. You can also use butter paper in the pan and grease the butter paper.
  4. Add oil and water in dry ingredients, whisk well to make a smooth batter, make sure there are no lumps in mixture.

  5. Add vinegar in mixture, stir well and quickly pour the mixture in greased baking pan.
     
  6. Place the pan on center rack in preheated oven.
  7. Bake it 25 to 30 minutes or until the toothpick inserted in the cake came out clean.
  8. Let the cake cool at room temperature for 10-12 minutes.
  9. Gently remove cake from pan and put it on big plate for frosting.

Chocolate Ganache/frosting:

  1. Make sure that unsalted butter it at room temperature. Now melt the butter in small pan over medium heat then add sugar in it.

  2. Continuously stir it until sugar mixture started leaving the pan and stick together.
  3. Turn off the heat, add cocoa powder and mix well.
  4. Now add milk and stir it well. Nice, creamy and shiny frosting is ready.
  5. Allow the chocolate ganache slightly before pouring on top of cake. Start pouring on center of the cake and work outward and sides.
  6. Decorate with dark chocolate flakes or m&m or be creative as your choice.
  7. Serve immediately or put it in freeze for 2 hours to set and serve.

Notes 

  • I used whole wheat flour for this recipe, you can use all purpose flour or maida as well.
  • Lime juice can be substituted for vinegar.
