Pudla - Gram flour pancakes

Pulda is good Gujarati snacks, rich with protein.


Ingredients

  • 1 cup gram / chickpea flour
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1/2 tsp sugar
  • 1/2 tsp lemon juice
  • 1/2 tsp carom seeds (ajwain)
  • 1/2 tsp baking soda or fruit salt
  • salt to taste 
  • 3/4 cup water
  • oil 
  • 1/2 cup fenugreek leaves

Steps

  1. Take gram flour into a bowl. 
  2. Add all the spices - red chili powder, turmeric powder, sugar, salt, lemon juice and carom seeds (ajwain) into gram flour 
  3. Add water and whisk well so there are no lumps. Add little water at a time to avoid the lumps. 
  4. Add fenugreek leaves in the mixture and mix well. Batter consistency should be like thick buttermilk. 
  5. Put a non stick pan on a medium high heat. Drizzle oil before pouring the batter on pan. 
  6. Also, add backing soda into batter at that time.
  7. Pour batter on pan and spread in a circular fashion to make thin pudla. This should be similar to how you make dosa or a pancake. 
  8. Add few drops of oil around the edge of the Pudla. 
  9. Let it cook for a minute and flip on other side when this top side is almost looking dry 
  10. Cook it again on bottom side for 1-2 minutes or till its done
  11. Serve hot with chutney, pickle, or ketchup or with tea or coffee
