Sambhar

Sambhar is south indian dish which taste very delicious with Idli, Dosa, Uttapam or Rice. It is made with lots of vegetables like onions, carrots, tomatoes, sweet potatoes, eggplant. radish, bottle gourd, drumstick, okra (lady finger) which you like and toor dal or mix dal.

In this recipes, I am using very few vegetables which my kids like and with all dals - toor dal, chana dal, moong dal, urad dal and masoor dal.

Ingredients
  • 1 cup toor dal
  • 1 tbsp chana dal
  • 1 tbsp moong dal
  • 1 tbsp urad dal 
  • 1 tbsp masoor dal
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 2 whole red chili 
  • 1/2 cup onions finely chopped
  • 1/2 cup carrots chopped in small pieces
  • 1/2 cup tomatoes finely chopped
  • 1 tbsp sambhar powder
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander - cumin powder
  • salt to taste
  • 1&1/2 tbsp tamarind paste
  • 1 tsp garam masala
  • 5-6 cup water
  • 1 tbsp coriander leaves to garnish


Steps
  1. Take all dals in big bowl, rinse well and boil dal and 3 cups of water in pressure cooker for 4-5 whistles on medium heat. mesh it well with the hand mixture like a smooth paste.
  2. Meanwhile, chop all the vegetables you wanted to add in sambhar and keep it aside.
  3. Now add oil in a big pan on medium heat and add whole red chilli and mustard seeds. Let the mustard seeds crackle.
  4. Now add onions and cook it for few minutes till they are translucent 
  5. Add sambhar powder on low heat and cook it for 1 minute. Here I have used homemade sambhar powder. If you don't have it, you can use any ready made sambhar powder. 
     
  6. Now add all vegetables and 1 1/2 cup of water.
     
  7. Then add red chili powder, turmeric powder, coriander - cumin powder, salt and garam masala. Stir it. Add the tamarind paste and let the vegetables cook until they are tender with close lid. Check in-between and stir occasionally. If vegetables are not done yet let it boil for few more minutes.
     
  8. Add the dal paste and stir well. add water as required to get sambhar consistency.
  9. Let it boil for 10-15 minutes, stir occasionally. Now taste the sambhar to check salt and sourness, add if more required. Switch off the heat and ready to serve.

  10. Garnish it with coriander leaves and serve with Idli, Dosa, Uttapam or Rice.
