Pulav (Vegetable Rice)

Pulav is great lunch box recipe. Its easy to prepare.



Ingredients

  • 1 cup basamati rice
  • 1 tbsp oil
  • 1 tbsp ghee (clarified butter)
  • 1 tsp cumin seeds
  • 1 inch cinnamon stick
  • 7-8 whole black paper
  • 1/2 cup onion - finely chopped
  • 1 green chili - finely chopped
  • 1 tbsp ginger - garlic paste
  • 1/2 cup carrot - finely chopped
  • 1/4 cup green peas
  • 1/4 cup corn kernel
  • 1/4 cup frozen spinach chopped (or 1/2 cup fresh spinach chopped)
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • salt to taste
  • 1 1/2 cup water
  • 1 tsp garam masala
  • 10-12 fried cashew chopped
  • 1 tbsp coriander leaves chopped to garnish 


Steps

  1. Rinse the basmati rice very well and soak in water for 30 minutes. 
  2. In big pan, take oil and ghee on medium heat. when it becomes hot, add cinnamon stick and whole black paper. then add cumin seed and let it crackle.
  3. Add onion and cook until its translucent. you can add pinch of salt to cook the onion faster. stir occasionally.
  4. Add green chili and ginger garlic paste and cook for few seconds.
  5. Add carrots, green peas, corn kernels, and saute them for 2 mins
  6. Add frozen spinach and stir it well. If you are using fresh spinach, then add it with all other vegetables together and saute it.
  7. Drain the water from rice and add rice in the the pan, stir it gently, saute it for 2 minutes.
  8. Add water and all spices (red chili powder, turmeric powder and garam masala) and salt.
  9. Let it cook on medium - high heat for few minutes or until rice can be visible on top. 
  10. Now lower the heat and let it cook with close lid for 7-10 minutes. Check if the rice is done and switch off the heat.
  11. Garnish it with chopped cashew and coriander leaves. 
  12. Serve hot with yogurt or raita.
