Khandavi (Chickpea Rolls)

Khandavi is delicious Gujarati snack made with chickpea flour, and it is also very very healthy and yummy!


Traditionally everyone is cooking the mixture in stove top pan while continuously stirring the batter. But beauty of this recipe is to cook the batter in pressure cooker - it is so easy that you would love making khandavi everyday and they will come out right all the time without any failure :)

Preparation Time - 10 minutes
Cooking Time - 30 minutes

Ingrediants
For Khadavi batter
  • 1 cup besan/gram flour
  • 1 cup yogurt and 1+1/4 cup water OR 2 1/4 cup buttermilk
  • 1/4 turmeric powder
  • salt to taste

For seasoning
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tbsp white sesame seeds
  • 1 green chili / or add as taste, chopped
  • 2 tbsp chopped coriander leaves 


Steps

  1. Take gram flour in a bowl, add salt and turmeric powder. Mix all ingredients well.
  2. Add yogurt, and mix well using whisk to make smooth paste. Make sure there are no lumps. If there are, stir for few more seconds.
  3. Add water and mix again
  4. If using buttermilk, pour little bit at a time and mix well to make a smooth paste. Add remaining buttermilk after there are no lumps. 
  5. Take a small bowl which will fit in your pressure cooker. Pour batter into this small bowl. Pour water in cooker and put a small stand. Put this small bowl with batter inside the cooker. Close the lid. Cook it for about 5 whistles. 
  6. Let the pressure cooker cool down until all air is released
  7. Remove the small bowl out of cooker, mix the better very well with the spoon (about 1 minute)
  8. Quickly take 3 tbsp cooked batter onto a large plate and spread very thin layer using spatula. Make sure the layer is evenly spread. Do this step for all the remaining batter quickly before batter cools down. If batter cools down before you spread, it will become lumpy and difficult to spread
     
  9. Allow to cool down. 
  10. Cut into about 1 1/2 inch strips. Roll each strip tightly and put them in a serving plate.



    Now, lets make seasoning for this delicious Khandavi rolls.
    1. Heat oil and crackle the mustard seeds
    2. Add green chilies and cook for few seconds
    3. Add sesame seeds and wait until they crackle
    4. Spread this hot tempering mixture evenly using a spoon on khandavi rolls
    5. Garnish rolls with coriander leaves 


    Important
    • If you add all the buttermilk or water at one time, there will be lot of lumps and they will be hard to remove
    • You can use hand mixture to mix the batter if there are lumps
