Chhole (Chickpea beans subji)

Chhole is very popular North Indian Cuisine. It is very healthy as chickpea is rich of protein.

Ingredients:

  • 2 cup chickpea beans boiled
  • 4 tbsp oil
  • 2 bay leaves
  • 1 tbsp ginger garlic paste
  • 1 medium onion finely sliced
  • 4 medium tomato chopped
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 2 tsp coriander - cumin powder
  • 2 tbsp chhole masala powder
  • 1 tsp garam masala
  • 1/4 tsp mango powder (amchur powder)
  • 1/4 tsp chat masala
  • Salt to taste
  • 1/2 tsp kasuri methi (dry fenugreek leaves)
  • 1 tbsp coriander leaves to garnish

Steps:

  1. Soak 1 cup chickpea overnight in water. Cook them in pressure cooker with 3 cup of water and salt for 6-7 whistles. Open the cooker lid when air escaped and keep chickpea aside 
  2. Make tomato puree in blander and keep it aside 
  3. Put some oil in deep big pan on medium heat. Add bay leaves, onion into hot oil. Cook until onions are translucent   
  4. Add ginger garlic paste in the pan and cook it for few seconds 
  5. Add tomato puree in the pan and cook for 2 minutes 
  6. Add red chili powder, turmeric powder, coriander cumin powder, chhole masala, garam masala, mango powder and pinch of salt in the gravy. You can use any ready made chhole masala powder. I use Everest chhole masala. Mix well. 
  7. Let it cook for 5 minutes with covered lid on medium heat 
  8. Add chhole in the gravy. Adjust the salt as per your taste. 
  9. Let chhole cook for 10 minutes with covered lid on low medium heat. Stir occasionally  
  10. For extra flavor - you can ad chat masala and Kasuri methi. Mix well and switch off the stove 
  11. Garnish with coriander leaves. Serve hot with rice, chapati, paratha or Bhature.
