Muthiya is very healthy and popular Gujarati snacks as it is made with so many different kind of flour and lots of vegetables. Today here is the recipe of spinach muthiya. Check out my earlier post of Dudhi Muthiya for more variation.
Ingredients :
- 1 cup millet flour (Bajari aata)
- 1 cup wheat flour
- 1 cup coarse sooji (Rava)
- 1 cup coarse yellow corn meal
- 6 tbsp oil
- 4 cup spinach/Methi finely chopped
- Salt to taste
- 1 tbsp sugar
- 1/2 tsp turmeric powder
- 1/2 tsp green chili paste
- 1 tsp red chili powder (or to taste)
- 2 tsp carom seeds (ajvain)
- 2 tsp sesame seeds
- 2 tsp garlic paste
- 1 tbsp lime juice
- 1/2 tsp baking soda
- 1/2 cup curd/yogurt/dahi
- 1 cup water (or as required)
- 1/3 cup coriander leaves/cilantro finely chopped
Seasoning :
- 3 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 1/3 cup peanuts
- Coriander leaves/cilantro to garnish
Steps :
- In big deep wide bowl, add all flours, oil, salt to taste, sugar, turmeric powder, green chili paste, red chili powder,carom seeds, sesame seeds, garlic, lime juice, cilantro and baking soda. Mix well.
- Now add spinach or Methi in it and mix well. You can add both spinach and methi and other vegetables as well.
- Add curd in the flour mixture and mix well.
- Add water as needed and knead it well to make a very soft dough.
- Now its time to steam it. In two layer steamer, pour some water in lower pan, grease the plate with some oil and put it in steamer on medium heat.
- Take some dough and make rolls with your hands and put it into the steamer. Keep some space between rolls to come out steam so it will cook dough very well.
- cover it with lid and let it cook for 25-30 mins then switch off the heat.let it be in the steamer with covered lid and cool for 20 mins.
- Remove all the rolls in dish and cut it in 1/2 cm thick pieces.
- Its time for seasoning. On medium heat, in deep sauce pan, pour oil, add mustard seeds when oil gets hot. Then add Peanuts and saute it, Add sesame seeds and lower the heat.
- Add Muthiya in it and mix well.
- Add cilantro to garnish it.
- Serve hot with tea, coffee or any chutney.
